		<description>Ohhh that looks so good.  Normally a fried egg atop of salad greens wouldn't do much for me, but seriously, that looks amazing.  Although I don't have left over potatoes at home tonight, I will soon and will try this lovely dish for lunch one day!  How very inspiring of a post, thank you =)</description>
