This week’s menu and another idea for pizza

The menu for this week is relatively short; as you can see, we’re headed to Mississippi to spend some time with family and friends before school starts. Most of what I’m planning revolves around what I have an excess of: tomatoes, basil, and Vidalia onions.
The farmer that I buy my tomatoes from starts about this time in the season boxing up very ripe tomatoes and selling them for cheap. Yesterday, I bought 15 pounds for $10! So, the only thing to do with that many tomatoes is make tomato sauce to freeze (and to use to make a lasagna for friends who are moving). And, of course, reserve some fresh ones for this pizza.

Not so much a recipe as a suggestion, for this pizza, you simply prepare whatever kind of crust you like, spread it with pesto, top with sliced tomatoes and fresh mozzarella, and drizzle the whole thing with olive oil and Kosher salt. Bake until the cheese melts.

Here’s a coincidence–on Tuesday afternoon, I’m leaving for Louisiana to spend time with relatives. We’ll almost pass on the interstate!
The pizza looks delicious, and that’s a great deal on the tomatoes. I’m hoping to pick up a few goodies at the farmer’s market in my hometown.

I am intensely jealous of those gorgeous red tomatoes! Can you possibly get some out here in the mail? Or maybe you should drop them by on your way to MS. Have fun!

Note to self: Find surreptitious way to obtain Jennifer’s home address so that you can raid her stores of leftover pizza while she’s in Mississipi.

I love fresh tomatoes on pizza. In fact, I think I prefer that to tomato sauce. Hope your trip here is refreshing!

That pizza looks great. Unfortunately my husband isn’t too keen on fresh tomatoes or I would be using them on our pizza at some point. I still haven’t seen a good tomato this year. I’m hoping it’s just too early here.
